Springtime Ravioli With Peas

Sweet peas add a pop of color and freshness to pillowy cheese ravioli, all coated in our Italian Cheese Trio sauce. It’s delicately cheesy — like spring in a bowl.

Ingredients:

  • 1 store-bought package frozen or fresh cheese ravioli
  • 1 jar Francesco Rinaldi Italian Cheese Trio Sauce
  • 1 cup frozen peas or fresh (don't use canned)
  • 2 cloves garlic, minced
  • 1/4 cup red wine
  • 1 Tbl extra virgin olive oil (a good swirl around the pan)
  • 1 Tbl butter
  • 3-4 fresh basil leaves, torn
  • Black pepper to taste

Directions:

  1. In a medium saucepan, sauté the garlic in oil and butter for a few minutes on med heat, not letting it burn. Add the basil and peas, cook a few more minutes, swirling the pan so everything combines. Remove from heat and add the sauce, wine, and black pepper. Stir to combine and put back on low heat, letting it simmer.
  2. Bring a pot of salted water to a boil and cook ravioli for 3-4 minutes. Drain the pasta and individually plate by spooning the sauce & peas over the ravioli. Enjoy outdoors in the sun!
