Ingredients:

  • 1 tsp active dry yeast
  • 1 tsp. sugar
  • 1 Tbl olive oil, plus more to oil the bowl and your hands
  • 3 1/4 to 3 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 jar Francesco Rinaldi Pizza Sauce

Directions:

  1. Mix yeast, sugar and olive oil into 1 1/4 cups warm water and let sit until bubbly, about 3 minutes. Put 3 cups flour in a mixer with the dough hook and add the salt. Pour in the yeast mixture and mix at medium ball of dough comes together, about 1 minute, adding more flour or water as needed. Let rest 5 minutes, then mix on low about 1 minute longer.
  2. Transfer dough to a countertop and knead until smooth, about 30 seconds. Place in an oiled bowl and cover with plastic wrap. Cover and let rise at room temperature until doubled in volume, at least 1 hour or up to 2 hours. (or cover and let rise in the refrigerator overnight.)
  3. Roll out dough for pizzas. Place on a pizza stone or baking sheet sprinkled with corn meal. Preheat oven to 500 degrees.
  4. Spoon pizza sauce on the pie, and add any topping you like. Place in oven and turn down right away to 450 degrees. Bake about 8-10 minutes.
