Green Beans & Potato in Sauce

A Sicilian classic when meat was scarce, but flavor was never lacking. Green beans and potatoes shine in our Garden Herb sauce, though any of our sauces would work beautifully. Enjoy this humble dish with crusty Italian bread and savor every bit of goodness!

Ingredients:

  • 1/2 lb fresh green beans (trimmed)
  • 1–2 lbs yellow or red potatoes (cut in quarters)
  • 1 jar Francesco Rinaldi Garden Herb Sauce
  • 2 Tbl extra virgin olive oil
  • 1 small onion, chopped
  • 2-3 cloves garlic, minced
  • 4-5 leaves fresh basil, torn into pieces
  • 1 cup water or vegetable stock
  • Salt & pepper to taste

Directions:

  1. Par-boil potatoes. Drain and rinse to stop cooking. Set aside. 
  2. In a large pot or Dutch oven, sauté garlic in olive oil over medium heat for a few minutes. Add the onion and cook, stirring, until softened, about 3-5 minutes. Add the sauce and basil. Continue to cook, stirring for about 10 more minutes.
  3. Add the beans, potatoes, and stock and stir to combine. Season generously with salt and pepper. Bring to a boil over high heat, cover, and reduce to low to maintain a gentle simmer until the potatoes and beans are tender, about 30 minutes. 
  4. Old school recipe, old-school tradition, call your favorite aunt, uncle, or both, and serve it up!
